Ingredients
- 1 cup quinoa, rinsed
- 2 cups cherry tomatoes, halved
- 1 large zucchini, diced
- 1 red bell pepper, chopped
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Cook quinoa according to package instructions.
- Toss vegetables and chickpeas with 1 tablespoon olive oil, salt, and pepper.
- Roast vegetables for 20-25 minutes until tender.
- Mix remaining olive oil with lemon juice and garlic for dressing.
- Combine quinoa, roasted vegetables, and chickpeas in bowls.
- Top with feta, parsley, and dressing.
