Ingredients
- 12 rice paper wrappers
- 2 salmon fillets (6 oz each)
- 1 avocado, sliced
- 1 cucumber, julienned
- 2 carrots, julienned
- Fresh mint leaves
- Fresh cilantro
- 2 cups lettuce, shredded
Dipping Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 teaspoon sesame oil
- Crushed peanuts for garnish
Instructions
- Season salmon with salt and pepper, bake at 400°F for 10-12 minutes.
- Flake cooled salmon into chunks.
- Fill a large bowl with warm water for rice paper.
- Dip each rice paper for 5 seconds until pliable.
- Layer ingredients in the center of each wrapper.
- Roll tightly, tucking in sides.
- Mix sauce ingredients together.
