Ingredients

  • 12 rice paper wrappers
  • 2 salmon fillets (6 oz each)
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 2 carrots, julienned
  • Fresh mint leaves
  • Fresh cilantro
  • 2 cups lettuce, shredded

Dipping Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon sesame oil
  • Crushed peanuts for garnish

Instructions

  1. Season salmon with salt and pepper, bake at 400°F for 10-12 minutes.
  2. Flake cooled salmon into chunks.
  3. Fill a large bowl with warm water for rice paper.
  4. Dip each rice paper for 5 seconds until pliable.
  5. Layer ingredients in the center of each wrapper.
  6. Roll tightly, tucking in sides.
  7. Mix sauce ingredients together.
