Ingredients

  • 1 large head cauliflower, riced
  • 1 lb lean ground turkey
  • 2 bell peppers, sliced
  • 1 red onion, diced
  • 2 tablespoons taco seasoning
  • 1 can black beans, drained
  • 2 cups cherry tomatoes, halved
  • 2 avocados, sliced
  • Fresh cilantro
  • Lime wedges

Instructions

  1. Sauté turkey with taco seasoning until browned.
  2. In another pan, cook cauliflower rice until tender.
  3. Sauté peppers and onions until soft.
  4. Assemble bowls with cauliflower rice base.
